You will meet Chef Gerardo Ramos and Chef Matias Mardones in a single dinner service. They come from different backgrounds. They work in different ways. But they share one focus. Deliver clear flavours and a dining experience that feels real.
Chef Gerardo Ramos built his career through years of hands-on experience in professional kitchens across Mexico, the United States, and Indonesia. He spent decades working through different roles, learning how each part of the kitchen operates. He understands how to manage pressure, lead teams, and maintain consistency during service.
His journey includes leading kitchens, opening restaurant concepts, and training teams to meet international standards. He focuses on authentic Mexican and Latin American cuisine. He works closely with ingredients, techniques, and preparation methods that stay true to their origins. Over time, he developed a style that is structured, precise, and grounded in discipline.
At Adriana Cocina & Bar, he applies this approach every day. He builds a kitchen that runs with clear systems. He ensures each dish meets the same standard before it reaches the guest. His focus stays on clarity of flavour and consistency in execution.
“For me, cooking is about respect. Respect for the ingredients, the culture, and the people we serve. When you keep it simple and honest, the flavour speaks clearly,” says Chef Gerardo Ramos.
Chef Matias Mardones took a different path.
He started in a family kitchen. No formal plan. No structured training at the beginning. He learned by watching his mother and grandmother cook. He learned by tasting and repeating. That early experience shaped how he works today.
Later, he entered professional kitchens in Chile. The environment was different. Faster pace. Higher pressure. Clear hierarchy. He adapted quickly. He moved across cities and countries to build his skills. Hong Kong, Manila, Macau, and Korea became part of his journey.
Each kitchen added something practical. Speed. Precision. Discipline. Team coordination. He learned how to work with different cultures without relying on language. In the kitchen, performance speaks first.
Now at 25hours Hotel Jakarta, he develops menus that combine global techniques with personal experience. He works with bold flavors. He focuses on timing and balance. His dishes aim to create a direct response from guests.
“I want people to feel something when they take the first bite,” he says.
At Adriana Cocina & Bar, these two approaches meet.
You will see how a structured system works alongside a more instinctive style. Chef Gerardo focuses on control, preparation, and consistency. Chef Matias focuses on movement, adaptability, and flavor layering. They do not compete. They complement each other.
The result is an eight-course dinner designed with clear intention. Each course has a purpose. Ingredients are handled with care. Techniques stay direct. The menu does not try to impress with complexity. It focuses on balance, texture, and flavor clarity.
You will experience Latin cuisine from two perspectives. One built over decades of leadership and operational control. One shaped by movement across cultures and kitchens.
